Well it's about gosh darn time, ya think!?
Sooooo sorry guys. For all of you out there who do read this and are reading this now. I didn't mean to neglect you, and it's not that I didn't have anything to say either, cause I did ;) I have been quite busy! Lets see from my mom coming to visit, an art show, booking 3 gigs, since my last post. Working my full time job, interviewing for another ;) (and getting it) and going to the one and only Las Vegas for my best friends Bachelorette party. Ay ya ya!
But I have managed to remain vegan and cook yummy food during that time, as well. Which I will share with you in this nice lil' one of a kind post about lunch time. ;)
First off- I'll have you know, Las Vegas.... yeah, not a very vegan friendly place. I'm not even sure they understand what the word means :/ They def. cater to meat eaters there. and of course people who like to drink. :S The top picture is the view from our room at the one and only Caesar's Palace. All in all, it was an awesome weekend and I can't wait to see the finale of all these events go down on May 27th. Their wedding is going to be wonderful.
Another thing- I've kinda been taking more trips to Hollywood lately, for auditions and interviews, etc. So I've been able to pass by one of my favorite sweet spots more often and testing out different awesome donuts. Their always- amazing. No matter the flavor. I can't believe I still haven't tried a cupcake. I get so distracted by the donuts I leave without anything else! :) But still leave extremely happy. See what I mean.... this is their coffee crunch donut.

This place- just can't get much better.
Good thing it's not super close to me...
So back to lunch. What do you usually have for lunch?
For me, I always try to make sure I have a grain, protein and fiber.
Quinoa or brown rice, lentils or beans and a leafy green is the best bet for me to keep me feeling full and always enjoy my food. I always top it with cashew cheeze or carrots and cilantro. You can get creative with all the veggies and herbs there are out there. So flavorful when you start adding more of them!
