So it has been a while, a long while. I know. Don't be mad at me, I'm so sorry.
I've been going through a few struggles, as we all do. I also started to feel somewhat confused about where this was going as far as what I wanted for my website. I feel as though I might have gone to far pushing toward something that isn't always my lifestyle. Which by this I mean vegan.
Yes- for 1 entire month strait minus 1 day and then another whole month I did in fact eat vegan completely. Everyday -night, etc. You get me. But I realized, I wanted cheese one day and had this mindset, where I said no to myself cause it was off limits. This is when I realized I was going to drive myself crazy- and in fact doing the wrong approach. I've been down this road before- with trying to diet- You know what I mean if you ever tried to 'diet'. Once you tell yourself no, sorry but your either going to be angry all the time or your going to eat like 20 of the things you told yourself you couldn't.
So, 'to make a long story short' (as my dad used to always say) I went for it- I had the cheese. and then I had some fish. Cause yes, I wanted it. I had it again a few days later- and so on and so on.
and yes, I also felt like poop the next day. After not eating something for a while your body is like- hold up lady! But I'm ok now. Don't get me wrong, the words in moderation- are always going to be very true.
But for me- like I said before, I will always support veganism. I basically eat vegan all the time, but there are those times that I don't. I'm quite sure I won't eat meat again, intentionally. But my love for shrimp and cheese are still at a high level. I appreciate amazing cheese with nice wine... I'm one of those, yes.
So I'll have it- when I want to. But seriously, I feel my best, the lightest, most energetic, when I eat vegan. You feel clean, and it's a great feeling. I highly recommend spending at least 1-3 days vegan a week, if not more. It doesn't have to be all the time, but try it some days.
soooooo now that we have that clear. I feel much better. :) So if I happen to post some pictures of cheese, to all you vegans, no getting mad at me, k! thank ya ;)
Also while I've been away- I've been making some dinner. and I've got some pictures for ya!
And some recipes, if your interested. I also borrowed my friends espresso machine, and been making some really good lattes in the morning. The amaretto agave helps too. Mhm! I'm getting pretty good at the foam thing!

While were on the subject of beverages, I've found a new love for beer. This my friends, is coconut beer. It's so good. I seriously just love it.
alright- now back to dinner time.
So this is brown rice, with kale, spinach and snow peas. Topped with gardein 'steak'.
I just cooked the brown rice, then sauteed the spinach, snow peas and kale together.
I always add garlic and black pepper and cayenne to pretty much anything. As well a tad bit of salt.
So making potatoes are a new thing for me. This was actually my first time! I got help from my boss... I cut up 4 small red potatoes, and put them in boiling water, for 15-20 minutes. Then took them out seasoned them with oregano,pepper, salt,cayenne and olive oil. Then baked for 10 more minutes. If you want them more roasted-ish. I made steamed kale for the side and grilled Tofu steak.
Ah, my favorite- pasta! Kamut pasta that is. Has the highest amount of protein for a pasta. 10 g per serving! Thats real good for pasta. So I grilled tofu and cut it up into pieces. I cooked the pasta. In a different sauce pan, I put earth balance butter and chopped up garlic (3-4 cloves) and made 'garlic butter sauce'. I steamed asparagus and cut it up afterwards. Mix it all up and you have garlic butter kamut pasta! I sprinkled whole wheat bread crumbs on top and more cayenne and oregano. always cayenne ;)
Simple sprouts-y sandwich.
2 pieces of ezekiel bread. I spread eggplant hummus on one side, mashed up avocado on the other side. Carrots, sprouts, spinach, cilantro and carrots on the inside. You can add any veggie you'd like to yours. Grapes and carrots on the side. This felt like a healthy kids school lunch. I liked that :)
Build you own burrito.
Brown rice, Black Beans, avocado, cayenne, cashew cheese, cilantro, ezekiel tortilla.
Mhmmmmm.
and a breakfast one- in case your sick of dinner. :)
Good news, grapes are in season. These are kashi waffles, with almond butter on top and chia seeds.
