Sunday Afternoon
I found this really beautiful picture of my Grandma, Mom & Dad, just the other day. I love the glow of this photo. It's a timeless photo. My mom told me this photo is from their wedding day. Which makes it even that more special. I used to not really believe in that timeless love, blah blah, whatever you wanna say it is. But now I know. I think it's a feeling rather than something someone can explain to you.
Thats how I feel about my beautiful man. It's nice to know it's the start of a new year, but even more so when you have amazing people in your life, and you know it's going to be another great one with them in it.
Today for many- is a day where you wake up, feeling the worst ever. Due to an extremely awesome and drunken night before. I somewhat woke up feeling this way, my boyfriend more so I'm sure. I of course went directly to coconut water- and just water. Which by the way, if you didn't know, Coconut water is the best thing you could drink if your hung over. It's got lots of potassium in it, and rehydrates you unlike any other. Then proceed to drink water the rest of your day!
Anyway- so there was work, like usual. Then I got off early, and was feeling pretty creative. So I decided to make my own eggplant humus. Mainly because Trader Joe's was closed today, very unfortunate. They truly have the best eggplant humus there. So instead I went and bought an eggplant- and tried to make my own.... which by the way is pretty good. That turned into making a LOT of brown rice, so that we could have it prepped for the week. I also then made almond butter. All you do is put almonds in a food processor and just wait! My food processor is a really huge gift. Makes you see how easy and simple food can be. To make it just 100% natural.
AND THEN... I made vegan spinach pesto :) My favorite. I regardless, love pesto. But getting the same look and even better flavor with out the dairy, and added greens, I'm in love! (more than I already was)
So there you have it. What'd I do on my 1st day of Janvier? I Preparedand was Creative.
Hopefully 2 things I can stick with for the rest of the year as well.
