Soon all the pumpkins and squash will be available. and I will make raw pumpkin pie. Oh man, I'm excited. Mostly for the weather- i must say. On another note. My mind has been non stop after enjoying an amazing dinner at Cafe Gratitude on Monday night, with live music, might I add ;)
The food and atmosphere was amazing. I seriously- loved it. It was so nice. I had this raw pizza, with cashew ricotta 'cheese'. My boyfriend has a Blt wrap, in this raw live apple curry wrap. and toasted maple coconut for the bacon? This place is beyond creative. Their unreal! -So of course it sparked something up in my mind. I've since made- raw key lime pie, vegan cauliflower mac n cheese, raw raspberry cheesecake, Chia Pudding, avocado and kale pesto, and Cilantro Jalapeno humus, garlic tahini, and mint tzatziki sauce. Yes it is only Thursday folks- and I did say I went Monday. So what if I'm food crazy?! :P
Well I'll have you know my tahini and hummus aren't completed, nor is the mint sauce- due to no cucumbers and waiting for my sesame seeds to finish soaking!

"What are you grateful for" - Cafe Gratitude.
Raw Key Lime Pie
for the crust: 1/2 cup dates and 1/2 cup almonds
for the filling: 1 avocado, 1/4 cup coconut oil, 1 tbsp lime juice, 1 tbsp of agave
Raw Raspberry Cheesecake
for the crust: 1/2 cup almonds and 1/2 cup dates with 1/4 tsp salt
for the filling : 1 cup cashews, 1/4 c coconut oil, 1/4 c agave, 2 tbsp lemon juice and 1 cup-1/2 raspberries and 1/2 blueberries
Chia Pudding
2 tbsp chia seeds with 1/2 cup of whatever milk of your choosing.
[I used chocolate no sugar added almond milk, added 3 tbsp of coconut and 1 tbsp agave]
Avocado and Kale Pesto
- 1 avocado,
- 2 handfuls of kale
- 1 handful of spinach
- 3 garlic cloves
- 1/2 tsp salt
- 1 tbsp lemon juice
- 1/4 c water

definitely ! I edited this and added the recipes, so easy! (but i do believe a food processor is some what needed, ) you could try your blender though possibly?
