Monday Night Banana Bran Muffins
I have had a nice long day off but I decided to make it a little better with making a couple of recipes.
One was taken from the internet- I haven't made muffins in a while, so I needed a little help! So excited about these muffins. I used to work at a place called Mani's bakery- which they sold all sugar free(sort of) baked goods- most were vegan. Sort of sugar free means that they used fruit juice and agave and maple syrup to sweeten their goods instead of sugar. So using those three types of sweeteners are lower on the glycemic index and don't spike your blood sugar the same way that sugar does.
So that being said- I once again, decided to make these muffins. I have this other recipe for pumpkin "moofies" Their like a mix of a cookie, scone, muffin- so I came up with the moofie. Their great- but I'm thinking next time I make them- I will definitely use fruit juice instead of agave - and see how that works out.
I get citracked easily- sorry- especially when it comes to pumpkin..... ohhhhh lalala pumpkin dream land.
Just kidding boys and girls- so here we go, banana bran muffins- so easy. so simple. so healthy.
Preheat oven at 350
2 cups Whole Wheat Flour
2 cups Bran
2 tsp Baking powder
2 tsp Baking Soda
1 tsp Salt
3 tsp Cinnamon
4 Mashed Bananas
4 chia eggs [4 tbsp chia seeds mixed with 4 tbsp warm water] or egg whites
12 oz. White grape juice
1/2 cup of pecans
I also added some pecan to the top after muffins had been in there for 5 min.
Mix all wet ingredients - then mix all dry ingredients in two seperate bowls.
Combine and stir - grease a muffin pan with olive oil spray- or whatever you have.
put muffins in and they will be done in 30 min.
These muffins make 12 and each one has 180 calories 8 grams of fiber and 6 grams of protein.
That sounds like a good way to start your day to me ;)
